Homemade Oatmeal Raisin Cookies Recipe
Oatmeal Raisin Cookies
My husband's family always talked about the grandmothers cookies. I recently came across her recipe and tried it out. I came to find out that these are the BEST oatmeal raisin cookies. They were a hit at the family get together and if my neighbors know I'm cooking them, they are quick to come over. So I am now going to share it with you.
Ingredients you will need:
1 Cup PACKED brown sugar
1 Cup granulated sugar
1 Cup melted butter (melt butter using the double boiler set up)
2 Eggs (large)
2 tsp. vanilla
2 Cups all purpose flour (do not sift)
2 tsp. baking powder
2 tsp. baking soda
1/4 tsp. salt
2 cups Quick Quaker Oats
1 Cup raisins
1 Cup chopped walnuts (preferably English Walnuts)
Time To Mix And Bake
Step 1
Preheat the oven at 350. Cream butter and sugars. Add the eggs and beat well together. Then add the vanilla and mix well. You can set that off to the side for now.
Step 2
Mix the flour, baking powder, baking soda, and salt with a spoon. Add the Quick Quaker Oats and mix with a spoon again. Then mix with the ingredients from step 1.
Step 3
Add into the mix the raisins and chopped walnuts. Stir into the dough mixture by hand.
Step 4
Once it is well mixed, drop the cookies by rounded tablespoon onto an non greased cookie sheet. Bake for 8 and a half minutes (exactly for chewy cookies. For crisper cookies, bake 9 or 10 minutes). Let cool on pan for 1 or 2 minutes. Then allow the cookies to cool on a wire rack. The cookies will continue to cook on the pan if you leave them on there.
This should make about 6 dozen cookies.
